Grilled Chicken Sofrito: A Jewish Recipe for Your Last Summer Cookout

 


Throw chicken tenderloins on the grill to make Grilled Chicken Sofrito, a tomato and pepper based sauce, packed with flavor and spice! Did you know this recipe goes all the way back to the 1920’s? Chicken sofrito originated from the cooks at Adath Israel, a small and welcoming Orthodox synagogue that was established by Polish Jews during that time period. The culinary team at Lester Senior Living sure is glad this recipe is still alive and well, as it’s the perfect summer dish. Grilled chicken sofrito is light, flavorful and pretty good for you as far as nutrition is concerned. If you’re looking for something new to serve your BBQ guests, give this one a try – it’s bound to turn up the heat!

Ingredients for Chicken Marinade

  • 1 ½  pounds boneless chicken tenderloins
  • ¼ cup lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 ½ teaspoons ground cumin and chili powder combined
  • 1 Tablespoon soy sauce

Ingredients for Homemade Sofrito

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 Roma tomatoes, seeded and chopped
  • 1 green pepper, diced
  • 4 large cloves of garlic, minced
  • 1 bay leaf
  • ¼ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • ¼  teaspoon oregano
  • ?  cup Cream Sherry
  • 3.5 ounces pimento-stuffed green olives, coarsely sliced
  • Kosher salt to taste

How to Prep the Grilled Chicken

  1. We recommend removing the tendon from each tenderloin and tenderizing at least one side of each tenderloin before starting on the marinade.
  2. Combine the lime juice, olive oil, soy sauce and spices in a bowl or dish big enough to fit all the tenderloins.
  3. Add the chicken to your bowl and let it marinate for at least an hour in the refrigerator.
  4. Once the chicken is done marinating, grill the tenderloins on both sides for about  5-7 minutes, until it is cooked but still moist and tender. You should also see a nice char on both sides of each tenderloin.
  5. Remove the chicken from the grill and put the tenderloins in a clean dish with foil overtop until you’re ready to serve with the sofrito sauce.

How to Make Sofrito Sauce for Grilled Chicken

  1. Grease your frying pan with olive oil and turn your dial to high heat for about a minute.
  2. Once the pan is hot, add in your diced onion and sauté for approximately 3-4 minutes or until lightly golden.
  3. Next, add the diced green pepper and the diced tomatoes to the pan and continue to cook for another 4 or 5 minutes until all vegetables are soft.
  4. Add the remaining ingredients except the olives and raisins and let the mixture cook over low heat for 3 more minutes.
  5. Next, add in your cooked chicken and bring to a gentle boil.
  6. Once boiling, add the olives and raisins and let it simmer for about 3-4 minutes.
  7. Transfer your grilled chicken sofrito to a beautiful serving bowl and enjoy with your summer BBQ guests!
