Passover Tzimmes with Carrot and Ginger

 


Passover is coming up very quickly! If you haven’t started thinking about what to serve your guests this year, try out our tzimmes with carrot and ginger recipe as a side dish. It’s a little sweet, a little spicy and a whole lot of delicious! Not to mention, it complements the traditional matzah we know and love very well. Without further ado, here is the signature tzimmes recipe provided by the chefs at Lester Senior Living in Morris County.

Ingredients for Tzimmes with Carrot and Ginger

  • Carrots (1 lb. cut into ½” rounds)
  • Onion (sliced into thin strips)
  • Sweet potato (peeled and chopped into ½” pieces)
  • Pitted prunes (½ lb. coarsely chopped)
  • Orange juice (½ cup)
  • Fresh ginger (grated, approximately 3 tbsp.)
  • Honey (3 tbsp.)
  • Lemon zest (1 tsp.)
  • Extra virgin olive oil (2 tbsp.)
  • Kosher salt
  • Red pepper flakes (a pinch, or more depending on your spice preference)
  • Fresh parsley (chopped)

Directions to Make Tzimmes with Carrot and Ginger

  • Preheat the oven to 400 degrees.
  • Grab a small bowl and mix the honey, ginger, red pepper flakes, lemon zest, olive oil (1 tbsp.) and salt (½ tsp.) together to form a glaze.
  • Set the glaze aside and heat your remaining olive oil in a large, oven-safe skillet over the stove.
  • Add carrots and onions to the skillet and cook until they soften (approximately 3 to 5 minutes).
  • Next, add in the prunes and sweet potato chunks until they soften, making sure to stir occasionally (approximately 10 minutes).
  • Stir in the orange juice and scrap up the vegetables that have started to stick to the bottom of the skillet.
  • Pour in the glaze you set aside earlier and stir until all the vegetables are coated.
  • Transfer the skillet to the oven and let it bake for approximately 30 minutes until the carrots and sweet potatoes break apart with a fork seamlessly.
  • Season with salt and sprinkle your freshly chopped parsley over the tzimmes before serving to your guests.
  • Enjoy!
