Blintzes: The Perfect Dairy Dish for Shavuot

 

Along with Passover and Sukkot, Shavuot is a harvest holiday – which means it’s all about the food! Particularly, the food with dairy in it. Why is dairy the focal point of Shavuot you might be asking? Well, there have been different explanations given throughout the years, but the one that seems the most plausible is how the Torah is referred to as “milk and honey” in chapter 4 of The Song of Songs. To honor this notion, it has become custom to eat sweet, dairy treats like blintzes. If you’re looking for a delicious blintz recipe to try, look no further! Serves: Up to 8 people. Total Cooking Time: Approx. 45 minutes

Ingredients for Blintzes:

  • 2 large eggs
  • 1 cup flour
  • 1 cup water
  • 1/2 tsp. kosher salt
  • 1/2 tsp. sugar
  • 1/4 tsp. baking powder

Blintz Filling: 

  • 8 oz. small curd cottage cheese
  • 8 oz. ricotta cheese
  • 1 large egg
  • 1 1/2 tbsp. Sugar
  • 1 pinch kosher salt
  • 1 tbsp. melted unsalted butter
  • 1/4 tsp. cinnamon
  • 1/2 tsp. grated lemon zest

Directions for Blintzes:

  1. First, grab two mixing bowls. In one bowl, whisk the flour, baking powder, salt and sugar together. Set that bowl aside and then in the other bowl, mix the eggs and water. 
  2. Next, add the bowl of dry ingredients to the bowl of wet ingredients by using a strainer or sifter. Note: You may have to add a few more tablespoons of water to the mixture to make the batter more loose. 
  3. For the filling, grab another bowl and mix all the ingredients together in no particular order. 
  4. Now for the assembly, start by greasing an 8 in. non-stick pan with a small amount of butter or olive oil and let it heat up. Then, pour a ¼ cup of the batter into the pan. Swirl the batter around to ensure the whole pan is fully coated in batter and let the “pancake” cook until the bottom is golden brown. 
  5. Carefully slide the “pancake” onto a plate, leaving the top of it uncooked, and repeat this process with the rest of the batter. Note: you may have to add a little bit more butter or olive oil to your pan as you make more “pancakes.”
  6. Once you’re done frying, separate each “pancake” with a piece of parchment paper and let them cool. 
  7. Now comes the filling, take each “pancake” cooked side up and put ¼ cup of filling in the middle. Fold one side over the filling, then fold the opposite side over. Next, fold the top over and the bottom, creating a blintz.
  8. In the same pan, add the blintzes in (folded side down) and cook over medium heat until golden brown. Then, turn them over and cook the other side on low heat until they are browned. Note: it may help to cover the pan with a lid to ensure the filling is nice and hot. 
  9. Serve to your guests with sour cream, honey and fresh fruit for Shavuot!
