Ingredients for Lemon Etrog Cupcakes (Approx. 12):
- All purpose flour (1 ½ cup)
- Baking powder (1 ½ tsp.)
- Unsalted butter, at room temperature (1 stick)
- White sugar (¾ cup)
- Large eggs (2)
- Vanilla extract (1 tsp.)
- Sour cream (½ cup)
- Sea salt (¼ tsp.)
- Zest of 2 lemons
- Lemon juice (1 tbsp.)
Frosting:
- Butter (1 stick)
- Icing sugar (1 ½ cup)
- Lemon juice (1 tbsp.)
- Lemon zest, extra for garnish (1 tbsp.)
- Fresh rosemary for garnish
Directions to Bake Lemon Etrog Cupcakes:
- Preheat your oven to 350°F and prepare a 12-cup muffin tin by greasing and lining each cup.
- In a separate bowl, whisk together the flour, baking powder, and sea salt. Set aside for later.
- Using an electric mixer or a hand mixer, beat together the butter and sugar, making sure to scrape down the sides of the bowl occasionally.
- Mix in the vanilla extract until fully combined.
- Add the eggs one by one, making sure each is fully incorporated before adding the next.
- In a small bowl, combine the sour cream, lemon zest, and lemon juice.
