Simple and Healthy Red Pepper, Pomegranate and Walnut Dip

Ingredients for Red Pepper, Pomegranate & Walnut Dip 

  • 3 roasted red peppers
  • ½ cup pomegranate juice
  • ½ cup toasted walnuts
  • 4 pitted dates
  • ½ teaspoon red pepper flakes
  • 2 tablespoons extra virgin olive oil 
  • Pomegranate seeds 
  • Coarse salt and black pepper 
  • Toasted pita breads or chips for dipping

How to Make Red Pepper, Pomegranate & Walnut Dip

  1. Soak the dates in hot water for about 10 minutes until they’re softened. After soaking, drain all the water from the dates as best you can. 
  2. Next, grab your food processor and pulse the dates, roasted red peppers, pomegranate juice, walnuts and red pepper flakes until the mixture becomes smooth. 
  3. With the food processor still running, slowly pour in your extra virgin olive oil until it’s thoroughly combined with the rest of the mixture. 
  4. Taste the dip and season with salt and pepper to your heart’s content. 
  5. Garnish the dip with pomegranate seeds and we recommend serving it with toasted pita breads or salty pita chips. 
  6. Enjoy!
